This is our second year purchasing coffee from Francisco Cardona Martin through our partners at Onyx Coffee in Guatemala. Coffees from Huehuetenago are dynamic and sweet with lower acidity and superb drinkability. When we received samples from Onyx this year, Francisco’s coffee stood out with its tropical characteristics such as tamarind and cranberry in the cup. The mouthfeel of the coffee has a sticky sweetness like caramel, a classic HueHue chocolaty body, and a nutty finish like almond butter.
About Francisco Cardona
When Francisco Cardona Martin bought La Colmenita in 2002, he had a vision: To produce the best quality coffees possible, by planting varieties known for excellence in separation, and investing heavily in equipment and farming techniques. Francisco is incredibly resourceful, drying his coffee on a patio he built on top of his house and investing nearly all profits from coffee sold back into the farm. He often attends cuppings with our QC team in Huehue to develop his skills and to learn where he can improve.
We're honored to work with our neighbor Francisco again this season - onyx coffee
