This is our second year purchasing coffee from Francisco Cardona Martin through our partners at Onyx Coffee in Guatemala. Coffees from Huehuetenago are dynamic and sweet, offering lower acidity and superb drinkability. When we received samples from Onyx this year, the tropical notes—we taste tamarind and cranberry in the cup—made Francisco’s coffee our personal pick of the litter. The mouthfeel of the coffee has an almost sticky sweetness, like old-fashioned caramel, while a classic HueHue chocolaty body and a finish of almond butter round out the sip.
About Francisco Cardona
When Francisco Cardona Martin bought La Colmenita in 2002, he had a vision: to plant coffee varieties known for excellence in separation, invest heavily in specialized equipment, focus on proper farming techniques, and (hopefully) produce the best quality of coffees he could manage. We believe he did manage. Francisco is incredibly resourceful and conscientious—he built an entire drying patio on top of his house himself, and invests nearly all his profits from the coffee back into the farm, constantly making adjustments and improvements to the process. He often attends cuppings with our QC team in Huehue to develop his skills and learn where he can continue to grow.
