Gyokuro is distinguished by shading the trees for between 1 week and 1 month before harvesting. This increases the production of Chlorophyll, giving the tea a stronger flavor, deeper and more vibrant color, and more caffeine. This tea steeps more delicately, and has a strong yet pleasant astringency.
