Hailing from Uji, Japan, this sencha-style green tea owes its rich umami profile to a shade grown process that dates back to the Edo period. Lack of sunlight results in a dense concentration of chlorophyll in each leaf, producing a cup with a similar quality to homemade broth. The liquor has notes of lemongrass, bamboo, and an amino acid tang.
